Age it on dead yeast—called “lees” because “dead yeast” apparently wasn’t luxurious enough.
At least 15 months. Three years for vintage.

Turn and tilt the bottles until the sediment moves into the neck.
Basically bottle yoga, but with an actual purpose.

Freeze the neck and violently eject the sediment under pressure.
